Walnut Burger Recipe 1


I know — I’ve often mentioned what a bad cook I am, so what the heck am I doing sharing a recipe you ask? Well, the other day on Twitter I mentioned that my son’s girlfriend made made me some meatless burgers for lunch. (She’d trained as a chef and OMG she is such a good cook!) A few people replied, saying they’d like the recipe, so I thought I’d share it here:

Walnut Burgers

1 cup coarsely chopped chick peas (canned)
1 tbsp olive oil
1 cup minced onion
3 cloves of garlic, crushed
1 tsp cumin
1/2 tsp salt
1/2 tsp pepper
1 cup finely chopped walnuts
1 cup finely chopped mushrooms
1/4 cup chopped cilantro
1/2 cup bread crumbs
1/2 cup water

  • in a large frying pan, pour in olive oil and turn it to medium high
  • throw in onions and sautee until tender (5 minutes)
  • add in garlic, cumin, salt and pepper. Stir and cook for 2 minutes
  • Add in the chick peas and cook for 2 – 3 minutes
  • toss in the walnuts and mushrooms. Continue to cook until mushrooms are tender then reduce heat
  • stir in cilantro, bread crumbs and water
  • Continue to stir until all water has been absorbed and resembles a meat texture then
    remove from heat and allow to cool
  • Form into patties and gently place onto a well greased grill (she used my Foreman grill)
  • Grill until golden on each side, flipping only once. (approximately 4 – 6 minutes per side)
  • Serve on a bun and enjoy! (mine was served on a foccacia bun which made it even tastier)
